Food Pairing: Filet Mignon, Lamb
Winemaker’s Notes: The sublime fruit for this wine was hand harvested and gently destemmed to stainless steel tanks for fermentation. Inoculation with selected yeast strains and a warm fermentation with a total maceration of 28 days created a well structured base. Following fermentation and maceration the wine was pressed and placed in 100% French barriques for 19 months yielding a rich, concentrated structured and complex wine.
Tasting Notes: Plum, black cherry, leather, and spice aromas and flavors are supported on a well-structured palate that leads to a long complex finish.
