Winemaker’s Notes: For this wine, hand harvested, whole cluster Chardonnay grapes were gently pressed, isolating juice extracted at low pressure to ensure high quality in the resulting wine. Produced in the ancestral method, this wine was bottled before dryness allowing the wine to complete its fermentation in bottle and aged for 20 months before disgorging.
Tasting Notes: Aromas of subtle biscuit, green apple and lemon repeat in the flavour. The wine has a rich mouthfeel with refreshing acidity and wonderful length. The mousse is full with great persistence.
