The grapes for this wine were harvested at optimal ripeness at the end of a warm ripening period. Warm fermentations using selected yeast strains, with 14 days of maceration yield a balanced wine exhibiting fruitiness and firm tannins with good length. Blending prior to ageing yields a harmonious wine, ready for consumption but with the strength to age.

Cabernet Sauvignon that was dried to achieve concentration of sugars and tannins was fermented warm and aged for 24 months in new and used French oak was blended with Cabernet Franc, fermented at warm temperatures with a 32 day maceration and 16 months of ageing in new and used French and American oak was blended to achieve this intense and powerful red.

Fermented in a combination of stainless steel and neutral French oak using spontaneous and non-traditional yeast strains with no malolactic fermentation and 6 months of ageing sur lie yields this complex Chardonnay.

Fermented under cool conditions in stainless steel using selected yeast strains, the fermentation was halted by cooling the fermentation, obtaining the desired balance. This low alcohol, higher residual sugar is balanced by the naturally high acidity and is my favourite expression of Riesling.

Wine Maker’s Note:Â
Our 2018 Rose is a blend of 64% Pinot Noir, 28% Riesling and 8% Gewurztraminer. Each wine was fermented separately and blended to achieve the desired aromatic profile, flavour and mouthfeel. The Pinot Noir was macerated for 6 hours prior to pressing and fermentation under cool conditions using selected yeast strains. The Riesling and Gewurztraminer were hand picked and whole cluster pressed, cold settled and fermented cool using select yeast strains. All wines were left in contact with gross lees for 3 months prior to blending. The resulting wine is dry and balanced with a rich mouthfeel and a delicate and complex aromatic and flavour profile.

Harvested at ideal ripeness and fermented at warm temperatures with a 10 day maceration followed by 6 months of ageing in stainless steel and neutral French oak produces a fruit forward and balanced wine.
