Wine Maker’s Note: 

Cabernet Sauvignon that was dried to achieve concentration of sugars and tannins was fermented warm and aged for 24 months in new and used French oak was blended with Cabernet Franc, fermented at warm temperatures with a 32 day maceration and 16 months of ageing in new and used French and American oak was blended to achieve this intense and powerful red.

Wine Maker’s Note: 

The sublime fruit for this wine was hand harvested and gently destemmed to stainless steel tanks for fermentation. Inoculation with selected yeast strains and a warm fermentation with a total maceration of 28 days created a well structured base. Following fermentation and maceration the wine was pressed and placed in 100% French barriques for 19 months yielding a rich, concentrated structured and complex wine.

Wine Maker’s Note: 

The grapes for this wine were harvested at optimal ripeness at the end of a warm ripening period. Warm fermentations using selected yeast strains, with 14 days of maceration yield a balanced wine exhibiting fruitiness and firm tannins with good length. Blending prior to ageing yields a harmonious wine, ready for consumption but with the strength to age.

A fine expression of Nebbiolo at 11 years with leather, spice, dried fig and slight floral notes. The freshness of the palate remains, with mellow tannins and a long finish.

Wine Maker’s Note: 

The goal for this wine was complexity in the aromatic and flavour profile with a tight yet rich palate. Fermented in a combination of stainless steel and neutral French oak using spontaneous and non-traditional yeast strains with no malolactic fermentation and 6 months of ageing sur lie yields this complex Chardonnay.

Wine Maker’s Note: 

Fermented under cool conditions in stainless steel using selected yeast strains, the fermentation was halted by cooling the fermentation, obtaining the desired balance. This low alcohol, higher residual sugar is balanced by the naturally high acidity and is my favourite expression of Riesling.

Wine Maker’s Note: 

Hand picked Gewurztraminer was dried for 3 weeks followed by whole cluster pressing and fermentation using natural and non-traditional yeasts in 56 L Demi johns to achieve this intense, super limited (105 L) and unique wine.

Wine Maker’s Note: 

This Chardonnay was fermented and aged for 18 months on lees in once filled and neutral French and American oak barrels. These winemaking decisions elevate the richness of this wines texture and lend complexity to the nose and palate through oak aromas integrated with the stone fruit and apple aromas of the Chardonnay.

Wine Maker’s Note: 

The varietals used for this wine were processed and fermented separately under cool conditions in stainless steel using selected yeast strains. Blended for a tart balance, this wine underwent the Charmat process to produce the carbonation and minimal yeast contact to maintain freshness and fruitiness.

Wine Maker’s Note: 

Fruit for this wine was harvested at the desired ripeness, processed gently and fermented separately under cool conditions using selected yeast strains. After 14 months the wines were disgorged and left “naturel”, using only the finished wine itself as the dosage. 

 

Alvento-Theia

For this wine, hand-harvested, whole cluster Chardonnay grapes were gently pressed, isolating juice extracted at low pressure to ensure high quality in the resulting wine. Produced in the ancestral method, this wine was bottled before dryness allowing the wine to complete its fermentation in the bottle and aged for 20 months before disgorging.

Aromas of subtle biscuit, green apple and lemon repeat in the flavour. The wine has a rich mouthfeel with refreshing acidity and wonderful length. The mousse is full with great persistence.

This Icewine was fermented under cool conditions using selected yeast strains until the desired balance was achieved. The fermentation was halted using cold temperatures. The massive acidity is balanced by the moderate alcohol and luscious residual sugar. Minimal ageing on lees was used to maximize freshness.

A short soak on skins followed by gentle pressing yields beautiful aromatic intensity while maintaining a fresh and soft palate. Fermentation at cool temperatures using select yeast strains and sur lie ageing in stainless steel for 6 months enhances this wine’s richness and complexity.

Wine Maker’s Note: 

Our 2019 Rosé is composed primarily of estate grown Marquette with small percentages of Muscat, Chardonnay and Riesling to add complexity and balance. Each wine was fermented separately and blended to achieve the desired aromatic profile, flavour and mouthfeel. The Marquette was harvested at optimal ripeness and pressed gently to maintain freshness. A cool fermentation using selected yeast strains allows the complex fruit of this varietal to shine. The resulting wine is dry, balanced and refreshing with good intensity and structure.

The fresh fruity side of Baco Noir is supported by approximately 3% of each of Cabernet Sauvignon and Merlot to add structure and length. Harvested at ideal ripeness and fermented at warm temperatures with a 10 day maceration followed by 6 months of ageing in stainless steel produces a fruit forward and balanced wine.
